Method:
1 Heat a frying pan over medium heat add caster sugar and cook for 1-2 minutes or until it starts to caramelise, add oranges and brandy and stir to combine.
2 Place a meringue nest on a plate, top with a few orange slices, repeat layering with nests and oranges, top with whipped cream and mint leaves, then drizzle with pan juices to serve.
