Method:
1 Heat oil in a frying pan over medium heat, cook onion and garlic for 2 minutes, add the chicken and spices and cook for 4-5 minutes, stirring occasionally to brown the chicken all over.
2 Add stock, tomato, olives and lemon to the pan, simmer for 4-5 minutes or until chicken is cooked through. Stir through the herbs just before serving.
