Method:
1 Preheat oven to 200°C fan-forced.
2 Heat a char-grill pan over high heat, cook chicken, drizzled with oil, for 2-3 minutes each side, transfer pan to oven for 5 minutes or until cooked through. Rest for 5 minutes then slice.
3 Heat oil and butter in a frying pan over medium heat, add cauliflower slices, cook for 2 minutes on each side or until golden. Add almonds, season with salt and pepper, remove from the heat.
4 Place cauliflower on a plate, top with sliced chicken and scatter with tarragon to serve.
