Method:
1 Heat oil in a frying pan over medium heat, cook mushrooms, garlic, broccolini and red onion for 3-4 minutes until softened. Season with salt and pepper and add the Worcestershire sauce.
2 Heat a char grill pan over medium heat, drizzle both sides of bread slices with olive oil and char-grill for 3-4 minutes on both sides or until toasted.
3 Heat a wok over medium heat until hot, add a little oil and swirl to coat. Pour the egg into the wok and swirl to form an omelette. Cook for 1 minute or until set then carefully turn, cook 1 minute then slide onto a plate.
4 Top omelette with mushroom mixture, fold into quarters and serve with the toasted bread.
