Method:
1 Preheat oven 200°C fan-forced.
2 Place pastry on a baking paper-lined oven tray and prick with a fork. Spread fig marmalade evenly over the puff pastry sheet. Bake for 10-12 minutes or until golden and crispy.
3 Heat a frying pan over medium heat, cook sugar for 2-3 minutes or until sugar starts to caramelise, add balsamic vinegar and lemon juice and cook for 2-3 minutes or until sauce thickens.
4 Place fig tart on a plate, top with vanilla ice cream and drizzle with balsamic syrup, to serve.
