Method:
1 Rub the tuna with olive oil and season with salt and pepper.
2 Heat a char-grill pan over medium heat, cook tuna for 1-2 minutes each side, or until cooked to your liking, remove and set aside. Cook asparagus, drizzled with oil, in same pan over high heat for 2-3 minutes and season with salt and pepper.
3 Combine tarragon, tomato, vinegar and 2 tbs of oil in a bowl, season with salt and pepper.
4 Arrange the asparagus on a plate and top with tuna and spoon over some of the vinaigrette to serve.
