Method:
1 Preheat the oven to 200°C fan-forced.
2 Place the strawberries in a bowl and sprinkle with half the sugar, set aside.
3 Combine flour, baking powder and remaining sugar in the bowl of an electric mixer and beat in butter until well combined, add egg and milk and mix until combined.
4 Spoon mixture into a greased square shallow silicon cake pan and spread to smooth top. Bake for 15-18 minutes or until firm and golden. Cool in pan for 5 minutes then invert onto a board.
5 To serve, cut cake in half to create two rectangles. Top one piece with cream and strawberries, top with remaining sponge and dust with icing sugar to serve.
