Method:
1 Preheat the oven to 200°C fan-forced.
2 Combine herbs on a plate, add cheese and roll to coat all over.
3 Heat a frying pan over medium heat, cook walnuts and sugar until sugar dissolves, shaking pan until caramelised, add vinegar and remove from heat.
4 Drizzle bread with olive oil and place on a baking tray, toast in the oven for 2-3 minutes or until golden.
5 Combine rocket and walnuts in a small bowl.
6 Serve the cheese with the rocket salad and toasted bread to the side
