Method:
1 Heat oil in a saucepan over medium heat, cook onion stirring for 3 minutes, add the tomato, broccolini, snow peas, cannellini beans and stock, simmer for 6-8 minutes, season to taste.
2 Process the parsley leaves and basil leaves in a food processor drizzling in olive oil, to make herb oil, season.
3 Ladle the soup into a bowl and stir in a tablespoon of the herb oil, to serve.
