Method:
1 Preheat the oven to 200°C fan-forced.
2 Pour oil into a medium saucepan until one-third full. Heat over medium-high heat until hot. Add the potato and fry for 2-4 minutes or until golden and crisp, remove with a slotted spoon and drain onto paper towel, sprinkle with salt.
3 Process the duck leg meat and parsley with a teaspoon of olive oil until smooth, season with salt and pepper, using hands mould into a burger pattie.
4 Heat oil in a frying pan over medium heat, cook the burger for 4-6 minutes each side or until cooked to your liking.
5 For the pear relish, heat oil in a saucepan over medium heat, sauté the onion for a minute, add the pears, cardamom, sugar and vinegar, simmer for 4-6 minutes.
6 Drizzle both sides of bread with oil and place on a baking tray in the oven and toast 2-3 minutes each side or until golden.
7 Place a bread slice on a plate, top with the burger and spoon over some relish, top with parsley and the remaining bread and chips to the side to serve.
