Method:
1 Preheat oven 200°C fan forced.
2 Heat oil in a frying pan over medium-low heat. Add duck, skin side down, cook for 5-6 minutes or until fat renders down, turn and cook for a further 2 minutes, then transfer pan to the oven and roast for a further 8-10 minutes for medium or until cooked to your liking. Rest for 5 minutes.
1 Place potatoes into a heatproof, microwave-safe bowl and cover with damp paper towel. Microwave on High/100% for 4-5 minutes, or until potatoes are just tender. Drain well. Cut in half.
4 Heat oil a frying pan over medium-high heat, add potatoes, lemon juice and oregano and cook, stirring for 5 minutes or until golden, season to taste.
5 Melt butter in a frying pan over medium-high heat, cook pear slices for 2-3 minutes each side or until light golden. Add sugar and cook for a further 2 minutes or until tender and caramelized.
6 To serve, spoon caramelised pears on a plate, top with duck and serve with potatoes.
