Method:
1 Preheat oven to 220°C fan-forced.
2 Using an upturned medium-sized bowl, cut out a round from the puff pastry. Use a fork to prick holes in the pastry and place on a baking paper-lined oven tray. Bake for 10 minutes or until pastry is light golden.
3 Using the same upturned bowl, trace a round on a sheet of baking paper. Arrange pear slices in a circular pattern within the outline, slightly overlapping. Brush with melted butter and sprinkle with caster sugar. Bake in the oven for 4-5 minutes or until pears are golden.
4 Place pastry onto pears and invert onto a serving plate, carefully peel bake paper.
5 For the caramel sauce, combine butter, brown sugar, and cream into a heatproof, microwave-safe bowl. Microwave on High/100% for 3 minutes, stirring every minute until thick and smooth.
6 Pour caramel sauce over tart and serve with ice cream.
