Method:
1 Heat oil in a frying pan over high heat, cook fish, skin side down, for 3-4 minutes each side for medium or until cooked to your liking.
2 Heat oil in a frying pan over medium heat, cook capsicums and thyme for 4-5 minutes or until capsicums start to soften. Add tomatoes and season with salt and pepper cook for a further 2-3 minutes, until sauce thickens, add parsley
3 Spoon capsicum mixture onto a serving plate and top with fish to serve.
