Method:
1 Preheat the oven to 200°C fan-forced.
2 Lay the cheese on a baking paper-lined oven tray and place in oven for 2-3 minutes to melt.
3 Heat a char-grill pan over high heat, cook pork drizzled with oil for 2-3 minutes on each side and transfer pan to the oven for 6-8 minutes or until cooked to your liking.
4 Heat oil in a frying pan over medium heat, cook apples, butter and sage, spoon the melted butter over the apple and cook for 3-4 minutes then add brandy and flambé then transfer pan to the oven for 4-6 minutes or until golden.
5 Serve pork with camembert scattered with pinenuts with apples and chives to the side.
