Method:
1 Pre heat the oven to 200°C fan forced.
2 Place eggplant and zucchini in a bamboo steamer and cover with lid and steam over a saucepan of simmering water for 6-8 minutes or until tender.
3 Combine the chilli flakes and spices and 1 tsp salt in a bowl and using hands rub the pork with oil, coat with the spice mixture.
4 Heat oil in a frying pan over medium heat, cook pork for 2-3 minutes each side then transfer pan to the oven for 6-8 minutes or until cooked to your liking, transfer to a plate and rest for 5 minutes, and then slice.
5 Heat oil in same frying pan over medium heat, add steamed vegetables and toss to heat through, season with salt and pepper.
6 Arrange the egg plant and zucchini on a plate and top with the pork to serve.
