Method:
1 Pre heat the oven to 200°C fan forced.
2 Spread one piece of chicken with ricotta and top with basil leaves, season with salt and pepper, top with the remaining chicken piece, place on a sheet of aluminum foil, drizzle with olive oil, roll foil and twist the ends to enclose.
3 Bake on an oven tray for 10-15 minutes or until chicken is cooked.
4 Process the extra basil and other herbs in a food processor, drizzle with olive oil until smooth dressing, season with salt and pepper.
5 Slice chicken on an angle and arrange on a serving plate. Scatter with lemon and extra parsley and drizzle with the herb oil to serve.
