Method:
1 Preheat the oven to 200°C fan-forced.
2 Heat oil in a frying pan over medium heat, cook onion and garlic for 3-4 minutes or until soft, remove from heat and add chopped parsley and breadcrumbs. Season with salt and pepper.
3 Spoon mixture into mushrooms and sprinkle with the grated cheddar.
4 Place mushrooms on a baking tray and drizzle with olive oil, bake for 6-8 minutes or until the cheese has melted.
5 Serve baked mushrooms with lemon wedges and extra parsley leaves
