Method:
1 Preheat the oven to 200°C fan-forced.
2 Heat oil in a frying pan over medium heat, cook lamb for 1-2 minutes each side to seal. Transfer lamb to an oven tray.
3 Combine breadcrumbs, pine nuts, herbs and mustard in a bowl, drizzle with oil and season with salt and pepper.
4 Spoon mixture onto lamb and bake in the oven for 4 minutes for medium or until cooked to your liking. Serve.
