Method:
1 Heat oil in a frying pan over high heat, cook sardines for 1-2 minutes each side or until cooked through.
2 Place potatoes into a heatproof, microwave-safe bowl and cover with damp paper towel. Microwave on high for 3-4 minutes, or until just tender. Cool and thickly slice.
3 Heat oil in a frying pan over high heat, cook potato slices for 2-3 minutes each side or until golden.
4 Combine herbs, tomato, onion, lemon juice and 2 tbs oil in a bowl, season to taste.
5 Lay potato slices on a plate, top with herb salad and sardine fillets. Serve.
