Method:
1 Combine coffee, boiling water and brandy in a bowl, add sponge biscuits and soak, turning for 1 minute.
2 Combine cherries and sugar in a bowl and set aside.
3 Whisk cream, sugar and vanilla in a bowl to soft peaks.
4 Break up biscuits and place some among bases of large wine glasses, top with cherries and cream, repeat layers, serve.
