Method:
1 Cook rice according to packet directions.
2 Heat oil in a large frying pan over high heat, cook seafood, in batches, for 2-3 minutes or until seafood is sealed. Remove from pan.
3 Add garlic and onion to same pan and cook over medium heat for 2-3 minutes or until onion softens. Add stock, saffron, paprika, peas, rice and return seafood to the pan. Cook for a further 4-5 minutes or until seafood is completely cooked through.
4 Stir through tomato and parsley and season to taste to serve.

1 packet 90 second white rice
1 garlic clove, sliced
½ red onion, sliced
½ cup Campbells vegetable stock
Pinch saffron threads
1 tsp paprika
½ cup frozen peas, thawed
1 tomato, deseeded and finely sliced
¼ cup flat leaf parsley leaves
