Method:
1 Preheat the oven to 200°C fan-forced.
2 Brush fillo sheets with melted butter and layer.
3 Layer capsicum and brie in the centre of the fillo, top with chicken and season with salt and pepper, fold in the edges and roll to create a parcel. Brush pastry with butter.  Place onto baking tray. Bake for 15-18 minutes or until golden and crisp.
4 Pour cream into a small saucepan, place over medium heat and bring to a gentle simmer, stir in the chives and season with salt and pepper, cook for 2 minutes or until reduced slightly.
5 To serve, slice fillo pastry with chive cream spooned over.
