Method:
1 Preheat the oven to 200°C fan-forced.
2 Brush fillo pastry with melted butter and layer. Cut in half. Top each with fish, lime leaves and chilli and fold each into a parcel, brush tops with butter, place on a baking tray and bake parcels in the oven for 8-10 minutes or until golden and fish is cooked.
3 Combine soy sauce, sesame oil and sweet chilli sauce in a bowl and pour among 2 dipping bowls.
4 Plate fish beignets with the dipping sauce to the side to serve
