Method:
1 Combine walnuts and icing sugar in a bowl. Heat a small saucepan over medium heat, add caster sugar and 1 tbs water and stir until dissolved, then bring to the boil.  Reduce heat to low, add walnut mixture and cook for 1-2 minutes or until walnuts are coated. 
2 Heat a small saucepan over medium heat, add orange juice and star anise and bring to the boil, boil for 2-3 minutes or until reduced by half.
3 Arrange pear, witlof, stilton, onion and parsley on a plate, scatter with walnuts and spoon over orange juice dressing and drizzle with olive oil to serve.
