Method:
1 Heat a char-grill pan over medium-high heat. Brush steak with oil and season with salt and pepper and then cook steak for 4-5 minutes on each side, for medium-rare or until cooked to your liking. Rest for 5 minutes.
2 Heat 1 tbs oil in a frying pan over medium heat, cook witlof and sugar for 2-3 minutes or until witlof starts to caramelise. Add vinegar and cook for 2 minutes or until reduced by half, add chicken stock and cook for 5-6 minutes or until reduced by half. Add parsley and stir to combine.
3 Place witlof on a plate and top with grilled steak to serve.
