Method:
1 Combine the tomatoes, chillies, sugar and balsamic in a saucepan, place over a medium heat and simmer for 5-7 minutes or until reduced.

2 Bring a saucepan of water to a simmer, using a slotted spoon create a whirlpool, crack the eggs into the water and poach until cooked to your liking, remove from water and drain onto kitchen paper.

3 Place the bread on a plate, top with the eggs and spoon over the jam to serve.
