Method:
1. Preheat grill to hot.
2. Cook pasta in a medium saucepan of boiling water until tender; drain.
3. Microwave sweet potato until tender; drain.
4. Combine eggs, milk and pasta in large jug. Stir in sweet potato and basil.
5. Heat oil in a large frying pan; add egg mixture. Cook 3 minutes, or until frittata is almost set. Grill 5 minutes or until frittata sets.
6. Transfer frittata to serving plate; serve sprinkled with tomato and extra basil leaves, if desired.
