Method:
1. Preheat the oven to 220°C. Grease a deep baking tray.

2. Combine water, yeast and sugar in a small bowl and whisk together. Set yeast mix aside for 2-3 minutes.

3. In a large bowl, combine flour, yeast mix and oil and bring dough together.

4. Place dough on a lightly floured surface and knead for 2-3 minutes. Leave the dough to rest for 2-3 minutes in a warm place.

5. Press dough into the baking tray and flatten to cover surface of the tray.

6. Spread tomato paste over the dough, sprinkle mushrooms and tear half the mozzarella over.

7. Bake the pizza for 10 minutes.

8. Top pizza with remaining mozzarella and basil leaves.
