Method:
1. Using a vegetable peeler cut sweet potato into long thin strips.
2. Heat the vegetable oil in a large saucepan; deep-fry sweet potato, in batches, until browned and crisp. Drain on absorbent paper.
3. Meanwhile, cook pork in a heated lightly oiled small frying pan until cooked as desired. Cover pork; stand 5 minutes. Slice thinly.
4. Meanwhile, steam choy sum until tender.
5. Combine pork, choy sum, onion, sauce, sesame oil and seeds in medium bowl; toss gently to combine. Serve topped with sweet potato chips and lime wedges, if desired.
