Method:
1. Heat oil in a small saucepan; sauté onion, garlic, sumac and potato until onion softens.
2. Add dates, beans and stock; bring to a boil. Reduce heat; simmer about 5 minutes or until potato is tender.
3. Stir in couscous; remove from heat. Stand, covered, about 5 minutes or until liquid is absorbed, fluffing with a fork occasionally.
